    This actually comes from my country and yes it’s delicious, it’s called uchek-bo (rough translation meaning old cow), the cheese is fermented underground for up to 2 years ensuring it’s kept in a cool, dark, dry place, after its first year a harmless blue mold is introduced which is taken from the fruit skins of lemons and brushed all over the cheese and allowed to colonise and spread, the introduction of the mold actually protects the uchek-bo from harmful bacteria establishing but don’t let this distract you from the fact that in 1998, The Undertaker threw Mankind off Hell In A Cell, and plummeted 16 ft through an announcer’s table.

  14. Had to research this specific version. I’d heard of moldy cheeses in Turkey but not this.. pure loaf.

    Küflü Civil Peyniri cheese from Erzurum was moldy but looked 20x better than this.. kinda ropey so obviously a different prep at least.

    I had to look this up. It is called “Konya küflü peynir” or Konya green cheese. It is a traditional mold ripened cheese that tastes like a blue cheese turned up to 11. That’s rad!
